To make one infusion, you will need a 32-ounce mason jar, freshly boiled water, and the herb or herbs of your choice.

Choose a maximum of two herbs at a time and make your infusions at night so that they're ready for you to drink the next morning.

Clean your jars thoroughly and put some water on to boil.

For the oat straw infusion, pack one jar one-third of the way to halfway with the plant material.

For the second infusion, fill the jar one-third to halfway with nettle leaf, and then a small amount of red raspberry leaf.

Pour your freshly boiled water to the top of each jar, then tightly seal the lid. Give your jars a good shake, then leave them to steep overnight.

In the morning, strain the jars, pressing down on the plant matter to get every little bit of nourishment out. Add some maple syrup or honey for sweetness if you wish.

Voilà…two simple and nutrient-packed infusions that you can make literally with your eyes closed!
